Brewing with full immersion, as apposed to pourover, is a much more forgiving way to brew. Over extraction here is much harder to achieve, since extraction slows as the TDS (total dissolved solids) in the brew water increase.

Full immersion will generally give you a more balanced brew that favors body and sweetness.
