Perched high in the Los Arados region of Nueva Segovia, Finca Libre is an experimental sanctuary dedicated to the art of coffee innovation. This particular lot is a collaborative masterpiece involving producer Pil-Hoon Seu, utilizing a sophisticated carbonic maceration process inspired by the world of fine wine. Whole cherries are sealed in temperature-controlled barrels where carbon dioxide naturally displaces oxygen, triggering an "inside-out" fermentation that amplifies the bean's inherent fruitiness and structural complexity.
After several days of maceration, the cherries are stabilized in a cold room before finishing their drying journey on raised African beds. The result is a cup of remarkable richness and body, offering a layered profile that reflects the meticulous care of its high-altitude origin.
