Chiroso is one of the most exciting varieties making waves in specialty coffee right now. A rare natural mutation of Ethiopian landrace genetics, first discovered in the Antioquia region of Colombia, it produces elongated beans with a cup profile that sits somewhere between a floral Geisha and a vibrant Ethiopian natural. Finca Las Flores in Huila grows this lot at 1750 metres and processes it using natural lactic fermentation, a method that encourages the development of intensely clean, fruit-forward character while preserving the variety's signature brightness and tea-like body.
The result is a genuinely arresting cup. Watermelon and raspberry hit first with a juicy, candy-sweet intensity, then mint lifts everything into a cool, refreshing finish that lingers beautifully. This is specialty coffee at its most expressive and most fun. A fleeting opportunity to experience Chiroso at its most articulate: secure your bag before the window closes.
