This exceptional Geisha lot comes from Finca Las Flores in the Huila region, produced by brothers Jhoan and Diego Vergara. Known for their technical precision, the Vergaras utilized a multi-stage fermentation process for this selection. The cherries underwent an initial oxidation phase in open bags for 36 hours before being pulped and sealed for a 60 hour anaerobic fermentation. To fix the complex aromatics and maximize sweetness, the lot was finished with a thermal shock wash, using hot water to open the bean's pores followed by a rapid cold water immersion.
The result is a highly expressive Geisha that balances intense fruit notes with crystalline clarity. The sensory profile leads with vibrant aromatics of passion fruit and raspberry, transitioning into delicate floral notes of rose and lavender. The cup is characterized by a silky, velvety mouthfeel and a clean, refreshing finish reminiscent of ginger and white florals. A masterclass in modern processing from one of Huila's most innovative estates.
