This honey processed Pink Bourbon selection from Finca El Paraiso represents a pinnacle of Colombian coffee production. Producer Jose Ignacio Gomez has cultivated coffee on his 6.5 hectare farm for decades, utilizing the unique volcanic soil and high altitude of the Buesaco region to develop exceptional sweetness. By employing a honey process on the Pink Bourbon variety, a hybrid known for its complex sugar profile, Jose enhances the cup with a syrupy mouthfeel and a pronounced, tropical fruit character.
The cup is defined by a lush and coating sweetness with a sophisticated floral lift. Expect vibrant notes of passion fruit and pink grapefruit, complemented by the concentrated sweetness of nectarine and honey. A delicate white tea quality provides structure to the cup, leading into a sweet and balanced finish with a lingering floral aftertaste. This is a masterful expression of the Nariño terroir and the skillful processing of one of Colombia's most dedicated smallholders.
