This specific lot comes from Alejo Castro, a sixth-generation producer at the renowned Volcan Azul estates. The Volcancito Blend is a masterful estate selection from Alejo’s farms across the West and Central Valley, where volcanic soils and high altitudes converge. This lot undergoes a Natural process, dried slowly on patios and through controlled mechanical drying, resulting in a cup that balances experimental flair with extreme repeatability and sweetness.
In the cup, the WILD nature is immediate: expect a profile reminiscent of a fine red wine, deep cherry compote, and the aromatic warmth of black cardamom. Despite its heavy body and wine-like acidity, Alejo’s precision ensures the finish remains clean, sweet, and rounded, avoiding the over-fermented funk often associated with intense naturals.
