Jairo Arcila is one of Colombia's most consistently exciting producers, farming small, carefully managed lots at his farm Finca Villarazo with the kind of curiosity and precision that keeps roasters coming back year after year. This Castillo lot is processed using the honey method, where a layer of fruit mucilage is left on the bean throughout drying. The result sits beautifully between a clean washed and a fruit-forward natural: brighter and more structured than the latter, richer and sweeter than the former. It's a process that rewards patience, and Jairo handles it with real skill.
