This lot represents an extraordinary intersection of meticulous agronomy and rare genetic potential. Ernedis Rodriguez produces this Sidra variety at Finca El Paraiso in Huila, where he utilizes a highly controlled washed process that includes a 36-hour cherry fermentation followed by a 40-hour parchment fermentation. This double-stage fermentation is key to unlocking the complex aromatic precursors that define this hybrid variety, resulting in a cup that showcases remarkable terroir-driven clarity.
The sensory profile is exceptionally elegant, leading with high-toned floral notes reminiscent of jasmine and rose water. As the cup cools, a refined acidity emerges with flavours of crisp green apple and sweet white peach, all supported by a light, silky body. It is a highly articulate expression of what modern Colombian viticulture can achieve when precision processing meets elite genetics. This is a fleeting opportunity to experience the Sidra variety at its most articulate, so secure your bag before the window closes.
