Sourced from the world-renowned Bermúdez Family at Finca El Paraíso in Cauca, Colombia, this lot delivers a vibrant, candy-sweet profile that challenges everything one knows about decaffeinated coffee. The Bermúdez family utilizes a proprietary Thermal Shock method and highly controlled anaerobic fermentation to isolate specific esters, resulting in a cup clarity that tastes more like a fruit infusion than a standard brew.
The sensory experience is defined by a lush and tropical complexity. One can expect primary notes of creamy Crème Brûlée and Honey Cheesecake, balanced by a bright and succulent Grape finish. Decaffeinated using the Sugarcane Process (Ethyl Acetate) in Colombia, the caffeine is gently removed while the cellular structure and delicate tropical aromatics remain completely intact.
