This exceptional single-producer lot from Luna Coffee highlights the technical precision of Carlos Guamanga at his farm, El Recuerdo, in the Bruselas district of Huila. Carlos is a true coffee nerd: kitting out his drying beds with Arduino boards and sensors to monitor environmental variables with scientific accuracy. This Pink Bourbon lot undergoes a sophisticated multi-step fermentation process: including a 24-hour whole-cherry fermentation followed by a 60-hour period in sealed barrels after depulping. This technical approach maximizes the precursor compounds within the seed while ensuring a crisp and articulate profile.
The sensory experience is defined by a vibrant interplay of tropical sweetness and refined savory depth. One can expect a primary note of guava and juicy blackberry: supported by the caramelized sweetness of cantaloupe and traditional panela. A structured foundation of black tea carries through to a clean, resonant finish with a crystalline mouthfeel.
