Faver Ninco has been farming coffee in Santa María, Huila for roughly 25 years, building Finca Costa Rica into a genuinely impressive operation that now involves his four adult children, each tending their own plants and varieties. The farm sits at 2,005 metres above sea level and is home to a diverse mix of varieties, including Geisha, Java, and the star of this lot: Pink Bourbon. The processing here is carefully staged, with whole cherry fermentation for 12 hours followed by depulping and an additional 36-hour dry ferment before drying. That layered approach to fermentation is what coaxes such vivid, fruit-forward character out of the cup.
Pink Bourbon has a reputation for sweetness and complexity when it's handled well, and Faver's lot delivers on both counts. Raspberry and tart yellow plum lead the way, with lemon verbena lending a floral, herbal lift. It cools into mild baking spices and a lingering sweetness that rounds everything out beautifully. This is a coffee with real personality, the kind of lot that adventurous brewers seek out and seasoned drinkers keep coming back to. A boundary-pushing profile for those ready to expand their sensory vocabulary: don't sleep on this one.
