After pivoting from a career in law during the pandemic, Victor has applied a clinical and creative rigor to his family’s multi-generational farm. Under the mentorship of his uncle Jairo, a trained agronomist, Victor has transformed the estate into a hub for high-end varietal experimentation. This specific lot is a testament to that dedication, utilizing precise pH monitoring and controlled submerged fermentations to capture the most elegant expression of the Gesha variety.
The sensory experience is defined by a clean and crystalline profile, featuring a structural acidity reminiscent of a fine Riesling. Intense aromatics of orange blossom and jasmine are supported by a delicate base of white tea and a spicy pop of candied ginger. To preserve the variety's floral complexity, Victor employs a multi-stage washed process, including a three-day submerged fermentation and a slow, 20-day drying period.
