The 707 Colombia Aroma Nativo represents the cutting edge of Colombian specialty coffee. Aroma Nativo, led by Luis Marcelino, is a project that sources cherries from smallholder farmers in the Huila region, specifically the Eastern Andes range, once a conflict zone but now a "paradise" for coffee production. This lot consists of carefully selected Pink Bourbon cherries that undergo a sophisticated Honey Double Fermentation. The cherries first experience anaerobic fermentation, followed by a barrel fermentation with native microorganisms and specific yeast strains. After drying for 12 days on raised beds, the beans are stabilized for three months, resulting in a cup with extreme aromatic intensity and structural durability.
This coffee delivers an immediate burst of vivid fruitiness, presenting a juicy and complex profile. It features bright notes of mandarin orange and lychee, balanced by the deep sweetness of blueberry and the tart snap of pink grapefruit. The texture is notably round and smooth, carrying a lingering sweetness that evolves as the cup cools. Its intense aroma and fruit-forward character make it equally exceptional when brewed hot or prepared as a refreshing cold brew. This is a refined example of how controlled fermentation can elevate the unique floral and fruity qualities of the Pink Bourbon variety.
