The 715 Costa Rica Don Eli YABAI is the definitive result of the "World Champion Series." It is a deep collaboration between the Moreno family, Tri-Up Coffee, and World Brewers Cup Champion Tetsu Kasuya. The Montero family has cultivated coffee in the Tarrazú region for three generations, and this specific lot represents their shift toward experimental, high-quality micro-lots. The name "YABAI" is Japanese slang for something incredible or "insane." It reflects the push to create a profile with extreme complexity and clarity through innovative post-harvest techniques.
The palate is characterized by an intense, concentrated sweetness that mirrors tropical and autumnal fruit. It offers prominent notes of dried pineapple and baked apple, which transition into a rich finish of almond chocolate and raisins. Despite the boldness of the anaerobic natural process, the acidity remains light and lively. It provides a juicy, round mouthfeel with a subtle hint of brown spices on the finish. It is a highly articulate coffee that showcases a syrupy viscosity while maintaining the refined elegance expected of a world-competition-grade selection.
