Hacienda La Papaya, located in the Saraguro region of Loja, is a pioneer in data-driven coffee cultivation. Under the leadership of Juan Peña, the farm utilizes a sophisticated network of soil sensors to monitor mineral levels and moisture 24 hours a day, allowing for a "universal language" of numbers to guide their fertilization and irrigation. This specific lot features the esteemed Geisha variety, treated with the "Mejorado" processing method—a technique Juan has refined to produce extreme structural clarity and sweetness. The result is a competition-level coffee that highlights the incredible potential of high-altitude Ecuadorian specialty coffee.
The palate opens with a light, transparent profile reminiscent of citrus and crisp green apple. As the cup cools, its complexity deepens, revealing elegant floral notes and a subtle, green tea-like nuance. The finish is defined by the gentle sweetness of mandarin orange and hints of ripe plum, all carried by a smooth, silky texture. It is an exceptionally fresh and juicy coffee that evolves beautifully as it sits, offering a refined drinking experience from the first sip to the last.
