This selection emerges from the prestigious Inmaculada Fellows Farms project: a collaborative initiative that bridges the technical expertise of Inmaculada Coffee Farms with the unique terroir of partner producers in the Cauca and Valle del Cauca regions. By implementing Inmaculada’s rigorous agronomic and post-harvest protocols, the project elevates regional varieties to elite specialty standards. This specific lot, T297, consists of Pink Bourbon cherries harvested at peak maturity in Pichindé, where the high-altitude climate and proximity to the Farallones de Cali Natural Park foster exceptional flavour development.
Processed with a meticulous wash protocol, the cup delivers a masterclass in terroir-driven clarity and refined technical execution. The sensory profile is marked by an elegant red floral aromatic, leading into a sophisticated layering of peach and red grape.
