The latest volume in Rooftop Coffee Roasters’ Cherry Bomb Series features a truly singular lot from Ildefonso Córdoba, a celebrated producer within the Los Guácharos group in Bruselas, Huila. This release showcases the rare Bourbon Ají variety, an Ethiopian landrace that has thrived in the high-altitude microclimates of Colombia. Known as the seed guru of his community, Ildefonso has utilized a sophisticated washed anaerobic process, involving sixty hours of whole-cherry fermentation followed by seventy hours of fermentation in sealed barrels to achieve a profile of startling complexity.
On the palate, this selection delivers a sophisticated array of flavours including strawberry rhubarb jam, Earl Grey tea, and ripe peach. Despite the variety name, which refers to a slight spiciness felt by pickers during harvest, the cup remains pristinely clean with a tea-like elegance and a tactile mouthfeel that mimics a high-elevation Gesha.
