This vibrant and singular lot from Rosso Coffee Roasters’ seasonal collection highlights the technical prowess of the producers at Alo Coffee in the Sidama region. Founded by Tamiru Tadesse: whose focus on quality led to a Cup of Excellence victory: this selection utilizes the JARC 74158 variety, a specialized cultivar selected for its exceptional density and aromatic potential at extreme elevations. The cherries are processed using a meticulous Natural method, involving slow drying on raised African beds for approximately 26 days. This intentional approach preserves the crystalline clarity of the terroir while allowing for a sophisticated development of complex sugars.
The palate is defined by a bold and balanced profile that features the deep richness of black plum met by the bright, citrus driven snap of grapefruit. This juicy acidity is expertly grounded by a smooth foundation of dark chocolate that carries through to a clean, resonant finish. The result is a cup of immense structural integrity and fruit forward depth, characteristic of the high altitude forests of the Bensa district. The quintessential expression of Sidama’s modern specialty movement. A necessary staple for the daily ritual of the discerning brewer.
