The Werka Nensebo is produced by around 850 smallholder family farmers in the village of Werka, each farming certified organic plots of two to five hectares. Cherries are delivered to the Nensebo district washing station, carefully sorted, and then dried on raised beds for 15 to 18 days with constant rotation to ensure an even, clean dry. It's a natural process, but one managed with real attention to detail, and the result is everything you'd want from an Ethiopian natural: lush, fruit-forward, and deeply satisfying.
Spilt Milk has pushed the roast profile further this year with a light-medium development that leans into the coffee's naturally velvety body and makes it shine on espresso. Blueberry compote and strawberry deliver that classic Ethiopian fruit sweetness, while London Fog florals add a delicate, creamy lift that makes the cup feel almost tea-like in its elegance. Equally happy as a filter or a milk-based espresso drink, this is a coffee worth coming back to. The quintessential expression of Ethiopian natural processing: a seasonal staple that earns its place in any discerning brewer's rotation.
