Ernedis Rodriguez operates Finca El Paraiso in Gigante, Huila, a farm that truly lives up to its name. His meticulous attention to detail is evident in every phase of production, from the carefully maintained coffee trees and on-farm nursery to the pristine fermentation tanks. Ernedis is a producer who constantly pushes the boundaries of quality, investing in infrastructure like an eco-washer to minimize water usage and implementing natural filtration systems to treat leftover fermentation water. His commitment to sustainability and innovation has made his farm a standout in the region.
This specific lot is composed of the Caturra variety, which underwent a 84-hour dry fermentation after being floated and de-pulped. The coffee was then dried in a greenhouse for 18 to 25 days. The result is a cup that reflects the diverse microclimates of Huila, the most productive coffee department in Colombia. With a cupping score of 87, this washed Caturra showcases the fruit clarity and technical precision that Ernedis Rodriguez is known for, offering a vibrant and clean experience for filter brewing.
