This carefully selected community lot from Subtext Coffee Roasters represents a collaborative effort by ten members of the ASODIETT cooperative in the Todos Santos Cuchumatán municipality. Grown in the high altitude Huehuetenango region, this selection is composed of traditional Caturra and Bourbon varieties. The coffee is produced by Maya Mam families who have farmed these healthy clay soils for generations, utilizing open-tank fermentation for 24 to 36 hours before finishing the washed process.
The sensory profile of this espresso is developed to showcase the ideal environment of Huehuetenango, the highest non-volcanic growing region in Guatemala. One can expect a balanced and clean cup with the structural sweetness characteristic of the region. Designed specifically for espresso applications, it offers a refined clarity that highlights the cooperative’s commitment to quality and healthy soil management.
