Produced by Dominga Carrasco at her farm, Finca El Amanecer, this selection represents a masterclass in varietal preservation and careful cultivation. Located in the renowned Jaén region of Cajamarca, Peru, at an altitude reaching up to 1860 masl, Dominga has become a champion for Caturro Amarillo (Yellow Caturra). This variety is famously fragile and difficult to grow, yet Dominga’s hands-on management and inter-generational knowledge have allowed it to thrive, influencing her neighbors to maintain the variety in their own fields.
The cup quality reflects the unique microclimate of the northern Peruvian Andes, where the Eastern and Western ranges meet. As a member of the El Morito group, Dominga focuses on resilience and transparency, processing her coffee on-site with meticulous attention to detail. The resulting washed Yellow Caturra offers a refined and clear profile, showcasing the elegant acidity and structural sweetness that have made Cajamarca the most famous coffee-growing region in Peru.
