This experimental and avant-garde lot from TorQué represents the frontier of modern Colombian coffee processing. Produced by Andres Martinez at his farm, El Paseo, in the Buesaco region, this selection undergoes a highly controlled washed process defined by technical precision. The cherries are first sorted and subjected to a double fermentation phase, where they are inoculated with specialized yeasts enriched by coffee lixiviate. This is followed by a prolonged fermentation period alongside fresh peaches and panela syrup, resulting in a cup of extraordinary aromatic intensity and structural sweetness.
The sensory profile is a nostalgic and playful exploration of creamy fruit, defined by a primary note of ripe peaches and creamy yogurt. This "peach yogurt" character is the defining feature of the cup, offering a lush, lactic tactile experience that is perfectly balanced by a caramelized sugar foundation. Utilizing a blend of 60% Pink Bourbon and 40% Castillo, the result is a cup of immense clarity and fruit-forward depth, bridging the gap between traditional specialty coffee and modern experimental gastronomy. A necessary staple for the daily ritual of the discerning brewer.
