Solaris is named well. This bright, fruit-forward Peruvian natural comes from Salomon Estela, a second-generation coffee farmer growing Marshell Naturals at 1850 to 1870 metres above sea level in El Pino, Peru. His farm is apparently the most visited in the entire network, which tells you something about both the man and his coffee. Family is his motivation, and the quality in the cup is his calling card. The Marshell variety is relatively uncommon and tends to produce naturals with a distinctive, almost candy-like sweetness that makes this lot immediately interesting.
The cup is playful and a little unexpected: 7UP crispness up front, a malty chocolate mid-palate, and a tart cranberry finish that keeps things lively from start to finish. Solaris is a natural that feels refreshing rather than heavy, with enough complexity to keep you thinking between sips. A boundary-pushing profile for the curious brewer: don't sleep on Salomon's work while it's still on the shelf.
