Have you heard of Cascara?Very few of the folks here I speak to have. Even the roasters I see and talk to, they may be more aware of its existence as a thing, but I feel pretty convinced the coffee world of North America is sleeping on Cascara as a thing.To review what we already know - Coffee is not a bean, but rather the seed of a fruit, the Coffee Cherry, which is a misnomer because the Coffee Cherry is not actually a cherry. Cascara is the dried fruit of the coffee cherry, and is generally prepared by steeping it like a tea. Cascara contains caffeine in similar levels to black teas, and definitely tastes closer to a sweet, fruity herbal tea than it does like coffee.I personally first tried cascara in 2015 in Copenhagen, at Coffee Collective, where they had made a cascara syrup and were serving it over coconut yoghurt with toasted almond sliced. It was one of the most memorable breakfasts I have ever had.Long story short, try it out.
