Epoch Chemistry's Gualvador is a fruit-forward Pacas from the volcanic slopes of Volcán El Chingo in Guatemala. Grown under shade at Gualvador Estate by third-generation farmer Jaime Ríos, this winey anaerobic natural undergoes extended fermentation that amplifies sweetness and ripe fruit. On filter, expect dried cherry, Maltesers, and raisin rum cake with syrupy body. As espresso, look for chocolate-covered cashew, pomegranate, and malt with creamy mouthfeel.
