évery’s Sebastian Ramirez is a seriously fun Colombian from El Placer in Quindío. Sebastian is a fourth-generation producer known for experimenting with processing, and this Pink Bourbon goes through a double-fermentation washed process with thermal shock and fruit maceration.
The result is a big, syrupy cup with stone fruit, nutty sweetness, and a rich, lingering finish. It’s fruity, sweet, and a little wild, with the kind of complexity that keeps things interesting without getting too weird. A great pick if you want something outside the usual Colombian coffee lineup.
