This single-origin selection is produced by Enrique Ferrufino at Finca San Jose in the Matagalpa region of Nicaragua. This high-altitude lot utilizes a specialized honey processing method where the beans are dried with the fruit mucilage still intact. This process creates a deep natural sweetness that, when combined with a dark roast, results in a coffee with a rich, heavy body and a smooth texture.
The flavor profile is bold and decadent, emphasizing the intense sweetness of the honey process within a darker roast structure. Expect dominant notes of bittersweet dark chocolate and toasted nuts, complemented by a subtle, jam-like fruitiness reminiscent of ripe raspberry. Its low acidity and substantial mouthfeel make it a versatile choice for milk-based drinks or standalone brewing.
