This single-origin selection is produced by Enrique Ferrufino at Finca San Jose in the Matagalpa region of Nicaragua. Utilizing a meticulous honey process, the coffee cherries are depulped while leaving a specific amount of mucilage on the bean during the drying phase. This technique results in a cup that possesses a more pronounced sweetness and a heavier mouthfeel than a traditional washed process, capturing the unique characteristics of the Nicaraguan terroir.
The cup offers a harmonious balance of sweetness and clarity. Expect a smooth palate featuring notes of milk chocolate and honey, complemented by a soft, red fruit acidity.
