Grown by smallholder farmers in the Sierra Madre mountains of Chiapas at high altitude under natural shade, this is the kind of decaf that makes you forget you're drinking decaf. The sugarcane process (also known as EA, or ethyl acetate) is a naturally derived method that's widely respected for how well it preserves a coffee's original character, and you can taste the difference here.
