A double-spouted shot glass does one thing a single-spouted glass can't: lets you observe both streams simultaneously as the espresso pulls, so you can see whether the extraction is balanced, even, and flowing correctly from both sides of the portafilter. Imbalanced extraction — where one side pulls faster or lighter than the other — is one of the most useful diagnostic signals in espresso, and it's only visible when the liquid is channelled into a transparent vessel with two clear exit points.
