Rooftop Coffee Roasters' Mexico Finca La Patria explores mosto fermentation, an innovative processing technique that uses the mucilage from freshly depulped coffee cherries to create extended fermentation conditions. Sourced from Tapachula, Chiapas and exported by L15N, this Catuai varietal showcases what happens when traditional Mexican coffee meets experimental processing. The result is a unique profile with toasted coconut, dried fig, and vanilla wafer notes that bring unexpected complexity and sweetness to the cup. The mosto washed process adds layers of flavor while maintaining the clean finish that makes washed coffees so versatile across brewing methods.
