Sourced from small family farms in Huila, Colombia, this lot celebrates the legacy of the Opitas, a term of pride, unity, and kindness inspired by local history. Grown at altitudes of 1,500 to 1,800 metres, the beans undergo a traditional 36-hour fermentation, washed processing, and sun-drying on parabolic dryers for 15 days, resulting in exceptional clarity and depth.
