Los Pirineos Pacamara is an intense, complex coffee from Diego Baraona's award-winning farm on El Salvador's Tecapa volcano in Chinameca, Usulutan (1100 to 1400 MASL). The Baraona family was involved in the original development of Pacamara and has selected superior phenotypes free from the herbal or oniony off-flavours sometimes found in this variable cultivar. Diego now produces certified Pacamara seeds for other farmers. This lot is selectively hand-picked, dry-fermented overnight, washed, and shade-dried on raised beds with daily raking and overnight coverage. Notes of tart red berries, stone fruit, and dark chocolate showcase why Los Pirineos has won numerous Cup of Excellence awards for their Pacamara.
