Finca el Puente Pacamara is an intense, sweet coffee from Marysabel Caballero and Moises Herrera's carefully selected Pacamara trees in Chinacla, La Paz, Honduras. This Pacas x Maragogipe cross produces highly variable cup profiles, but the Caballeros have identified exceptional phenotypes with characteristic winey acidity and fruit-forward complexity. De-pulped with mechanical mucilage removal, fermented overnight, washed, and shade-dried on raised beds in the drier Marcala climate, this lot delivers distinct red berry and tropical fruit flavours with remarkable smoothness. Tim Wendelboe notes that while Pacamara can be inconsistent year to year, last season produced several exceptionally intense small lots.
